1/2 cup butter
3 very ripe bananas, mashed together
1 tsp vanilla extract
2 cups flour (I prefer 1 C whole wheat and 1 C white whole wheat)
1 tsp salt
1 1/2 tsp baking powder
3/4 cup raw sugar (such as Muscovado or Sucanat)
1/2 cup chopped walnuts
1/2 cup grated coconut
1. Cream together the butter and eggs, then mix in the ripe bananas and vanilla.
2. In a small bowl, mix the flour, salt, baking powder, and sugar together, then add to the wet ingredients and mix just until all is moistened.
3. Add the walnuts and coconut.
4. Spoon the batter into muffin tins and bake at 350 for 30 minutes or so, until done
You could even add a scoop of vanilla protein powder to boost the protein content...if your into that!
